Lampuki in Malta: Season, Dishes and Ordering Checks
Understand lampuka and lampuki, their normal season, common preparations and the questions to ask about freshness, bones and price.
Fish, season and common preparations
A lampuka is a dolphinfish, also called mahi-mahi; lampuki is plural. It is not a dolphin mammal. In Malta it is a strongly seasonal catch, normally appearing from mid-August into the autumn, although fishery dates and availability can vary by year.
At the start of the season, restaurants may list grilled, pan-fried or baked lampuka as a fresh-fish special. Torta tal-lampuki is lampuki pie: fish combined with vegetables and other flavourings under pastry. Recipes vary between households and restaurants; do not expect one compulsory ingredient list.
Outside the normal season, ask whether a dish uses frozen fish or a different source. “Local fish” on a board does not prove that every species was landed in Malta that morning.
Questions to ask before ordering
Ask which boat or market supplied the fish, when it arrived and whether the displayed price is per portion, per 100 grams or by whole-fish weight. If choosing from a display, request the weight and total estimated charge before cooking.
Lampuki contain bones. Ask whether the kitchen serves a fillet or whole section and check carefully when serving children. A pie can still contain small bones. Fish is a major allergen, and shared fryers or grills may matter for other allergies.
For sustainability, check current notices from Malta’s Department of Fisheries and Aquaculture rather than assuming that a familiar seasonal method is automatically low-impact. Respect closed periods and do not treat out-of-season availability as a badge of quality.
A sensible first order
During the season, try a simply cooked fillet first, then compare it with pie if both are available. The simpler dish reveals the fish; the pie shows how Maltese cooks turn a seasonal catch into a fuller meal. Ask for today’s preparation rather than ordering from an old photograph.
