Ingredient-safe is not preparation-safe

Ask whether there is a separate preparation surface, toaster, fryer, utensils and storage. Find out whether ordinary flour is used nearby and who will mark the order. A shared pizza oven or fryer can transfer gluten even when the base or potatoes contain no gluten.

Explain “coeliac disease—no cross-contact,” not just “gluten-free preference.” If staff cannot answer, choose a sealed product or another venue. The Association’s restaurant guidance is useful for both diners and kitchens.

Maltese foods that still need checking

Grilled fish or meat may use flour, stock cubes, sauces or a shared grill. Chips can share oil with breaded food. Sausages and processed meats need labels. Soups and stews can contain pasta, flour or stock with gluten. Pastizzi, ftira and conventional Maltese bread are wheat-based. Desserts may contain biscuit crumbs or shared-counter contamination.
